I just returned from the Wednesday Market full of Spring inspiration and green leafy vitamins.

Each modest stall, mostly small local producers, had
its own take on some special seasonal goods; I mined
the boxes and baskets for a bunch of aillets (green garlic shoots) wrapped with a few sprigs of parsley, a last bunch of tiny white turnips, enough sprouting green tops to cook, dark shiny green blettes or Swiss chard, and some new young leeks perfect for making a gratin.
